  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large onion, sliced
  • 8 oz fettuccine or penne pasta
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups low-sodium chicken broth
  • ½ cup sour cream
  • 2 tbsp olive oil

Instructions

  1. Cook pasta according to package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with cumin and chili powder; sauté for about 6 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, add sliced onions and bell peppers; sauté for about 5 minutes until softened.
  4. Slice the rested chicken into bite-sized pieces and return to the skillet along with cooked pasta, chicken broth, and sour cream. Stir to combine until well-coated in sauce.
  5. Let simmer on low heat for another few minutes while stirring occasionally. Adjust seasoning if necessary.
  6. Serve warm garnished with fresh herbs.
