  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 bell peppers (any color), sliced
  • 1 small red onion, diced
  • 1 cup corn (fresh or frozen)
  • 1 can black beans (15 oz), rinsed and drained
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • ½ cup salsa verde
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)

Instructions

  1. Preheat grill to medium heat or oven to 400°F.
  2. Chop chicken into bite-sized pieces; slice bell peppers and onion.
  3. Tear off large sheets of aluminum foil and place equal portions of chicken in the center of each sheet.
  4. Surround chicken with bell peppers, onions, corn, and black beans.
  5. Drizzle with olive oil and sprinkle taco seasoning and lime juice over each packet.
  6. Seal the foil tightly to keep steam inside.
  7. Cook on grill or in the oven for about 25-30 minutes.
  8. Carefully open packets; sprinkle cheese over the top and close briefly until melted.
  9. Garnish with fresh cilantro before serving.
