Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup canned or roasted green chiles
- 4 large flour tortillas
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream (or Greek yogurt)
- 10.5 oz cream of chicken soup (low-sodium if preferred)
- 1 cup chicken broth (homemade or store-bought)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook chicken breasts until golden brown on both sides (about 6 minutes per side). Remove from the skillet and let rest before shredding.
- In a bowl, combine shredded chicken with half of the green chiles, half of the cheese, salt, and pepper.
- Lay each tortilla flat and spoon the chicken mixture onto the center. Fold in the edges and roll tightly.
