Instructions

  1. In a bowl, mash the ripe bananas until smooth but slightly chunky.
  2. In another bowl, whisk together flour, baking powder, sugar, and salt.
  3. Combine the mashed bananas, milk, and egg in the dry mixture. Stir gently until just mixed; lumps are okay.
  4. Heat a non-stick skillet over medium heat and add butter until melted.
  5. Pour about half a cup of batter onto the skillet. Cook until bubbles form on top (about 2 minutes), then flip and cook until golden brown.
  6. Repeat until all batter is cooked. Serve warm with your favorite toppings.
