  • 1.5 lbs chuck roast, cut into bite-sized pieces
  • 2 medium Yukon Gold potatoes, diced
  • 2 large carrots, sliced thickly
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 15 oz tomato sauce (no added sugar)
  • 4 cups low-sodium beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup fresh green beans, trimmed
  • 1 cup corn (optional)

Instructions

  1. Brown the beef in a large pot over medium-high heat for about 5-7 minutes until golden brown.
  2. Add onions and garlic; sauté until translucent, about 3 minutes.
  3. Stir in potatoes, carrots, tomato sauce, beef broth, cumin, oregano, salt, and pepper. Mix well.
  4. Bring to a boil then reduce heat to low; cover and simmer for 1 hour.
  5. Add green beans and corn (if using) and simmer uncovered for an additional 15-20 minutes until veggies are tender.
  6. Serve hot, garnished with fresh herbs if desired.
