Description

  • 2 tsp active dry yeast
  • 1 cup warm water (110°F/43°C)
  • 1 cup whole milk
  • 2 tbsp honey
  • 1 tsp salt
  • Cornmeal for dusting

Instructions

  1. In a bowl, mix warm water and honey; sprinkle yeast on top and let sit for 5 minutes until foamy.
  2. In another bowl, combine flour and salt; gradually add the yeast mixture and warm milk to form a shaggy dough.
  3. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Punch down the dough; roll it out to half an inch thick and cut out circles using a round cutter.
  6. Place on a baking sheet dusted with cornmeal; cover and let rise for another 30 minutes.
  7. Preheat a skillet over medium heat; cook each muffin for about 5 minutes per side until golden brown.
  8. Transfer to a wire rack to cool completely before slicing.
