  • 1 ½ cups crushed graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • 1 cup unsalted roasted pistachios, crushed (reserve some for garnish)
  • ½ tsp pistachio extract (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Mix crushed graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth in a large bowl. Add sour cream, sugar, and vanilla; mix until fluffy.
  3. Incorporate eggs one at a time, mixing gently to avoid overmixing. Fold in half of the crushed pistachios.
  4. Pour the filling into the crust and bake for 50-60 minutes until edges are set but center wobbles slightly.
  5. Allow cooling in the oven with the door slightly ajar. Refrigerate for at least 4 hours or overnight.
  6. Garnish with remaining crushed pistachios before serving.
