- 1 ½ cups crushed graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs, room temperature
- 1 cup unsalted roasted pistachios, crushed (reserve some for garnish)
- ½ tsp pistachio extract (optional)
Instructions
- Preheat oven to 325°F (160°C). Mix crushed graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- Beat softened cream cheese until smooth in a large bowl. Add sour cream, sugar, and vanilla; mix until fluffy.
- Incorporate eggs one at a time, mixing gently to avoid overmixing. Fold in half of the crushed pistachios.
- Pour the filling into the crust and bake for 50-60 minutes until edges are set but center wobbles slightly.
- Allow cooling in the oven with the door slightly ajar. Refrigerate for at least 4 hours or overnight.
- Garnish with remaining crushed pistachios before serving.
