- 1 cup espresso or strong brewed coffee
- 8 oz mascarpone cheese
- 24 ladyfingers (Savoiardi)
- 2 tbsp unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
Instructions
- Brew the espresso or strong coffee and let it cool slightly.
- In a bowl, combine mascarpone cheese with sugar and vanilla extract until smooth.
- In another bowl, whip heavy cream until soft peaks form. Gently fold this into the mascarpone mixture until fully combined.
- Dip each ladyfinger briefly into the cooled coffee, then layer them in a serving dish. Spread half of the mascarpone mixture over these cookies.
- Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
- Chill for at least 4 hours or overnight. Before serving, dust generously with cocoa powder.
