- 1 ½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- ¼ cup cinnamon sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan and bake for 8 minutes. Let cool.
- In a bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour half of the cheesecake batter over the cooled crust and sprinkle with half of the cinnamon sugar mixture. Add remaining batter and swirl in more cinnamon sugar on top.
- Bake for 50-60 minutes until the center is slightly jiggly. Turn off the oven and let cool inside with the door ajar for an hour.
- Chill in the refrigerator for at least four hours before serving. Dust with remaining cinnamon-sugar before slicing.
