  • 1 cup icing sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1/3 cup raspberry puree (fresh or frozen)
  • 1 tsp rose water (high-quality)
  • 1/4 cup unsalted butter (softened)
  • 4 oz cream cheese (block)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Whip egg whites in a clean bowl until foamy, then gradually add granulated sugar until stiff peaks form, about 5-7 minutes.
  3. Sift almond flour and icing sugar together in another bowl, then gently fold into the meringue until it reaches a lava-like consistency.
  4. Incorporate raspberry puree and rose water gently.
  5. Pipe small circles onto prepared baking sheets, leaving space between each.
  6. Let sit at room temperature for 30 minutes to form a skin before baking for 15-20 minutes.
  7. While cooling, prepare the filling by beating softened butter and cream cheese with raspberry puree until smooth.
  8. Once cooled, sandwich filling between macaron shells and refrigerate for at least an hour before serving.
