  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-4 minutes).
  3. Mix in the egg and vanilla until well combined.
  4. Gradually add flour, baking powder, and salt; mix until just combined.
  5. Gently fold in chopped strawberries.
  6. In another bowl, mix cream cheese with powdered sugar and lemon juice until smooth.
  7. Scoop a tablespoon of cookie dough onto the baking sheet, add half a teaspoon of cheesecake filling on top, then cover with another scoop of dough.
  8. Bake for 12-15 minutes or until golden brown around the edges. Let cool on the baking sheet before transferring them to a wire rack.
