  • 1 package (17.3 oz) puff pastry sheets
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)

Instructions

  1. Prepare the filling by mixing blueberries, sugar, cornstarch, and lemon juice in a bowl. Set aside.
  2. Roll out puff pastry sheets on a floured surface to about 1/8 inch thick.
  3. Cut circles from the pastry and place a spoonful of filling on half of each circle. Fold over to create half-moons.
  4. Seal edges firmly and crimp with a fork. Brush tops with egg wash.
  5. Preheat air fryer to 350°F (175°C). Cook hand pies for 12-15 minutes until golden brown.
  6. Allow to cool slightly before serving warm.
