  • 8 oz (225g) penne or fusilli pasta
  • 8 oz (225g) high-quality feta cheese
  • 2 cups (150g) chopped fresh broccoli
  • 3 cloves garlic, minced
  • 2 tbsp (30ml) olive oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Boil a large pot of salted water for the pasta.
  2. Cook pasta until al dente according to package instructions; drain and reserve some cooking water.
  3. In a baking dish, toss broccoli with garlic and olive oil. Place feta in the center, sprinkle with red pepper flakes, and bake for 25 minutes until golden brown.
  4. Combine the baked feta and broccoli with cooked pasta. Gradually add reserved pasta water until desired sauciness is reached. Season with salt and pepper before serving.
