  • 2 salmon fillets (6 oz each)
  • 4 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary or thyme, chopped
  • 2 cups assorted vegetables (bell peppers, zucchini, carrots), chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. In a bowl, mix balsamic vinegar, honey, minced garlic, salt, pepper, and herbs to create the glaze.
  3. Place chopped vegetables on one side of the baking sheet. Drizzle with olive oil and season with salt and pepper.
  4. Lay salmon fillets skin-side down on the other side. Brush half of the balsamic glaze over the salmon.
  5. Roast for 15-20 minutes until salmon flakes easily and veggies are tender.
  6. In the last few minutes, brush remaining glaze on the salmon for an extra sticky finish.
  7. Serve hot alongside roasted vegetables.
