  • 4 slices thick-cut bacon
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook the bacon in a skillet over medium heat until crispy. Let it cool on paper towels.
  3. In a bowl, whisk together the eggs with salt and pepper, then scramble them in a non-stick skillet over medium heat until just set.
  4. Chop the bacon and mix it into the scrambled eggs along with cheddar cheese and green onions.
  5. Roll out the puff pastry on a floured surface and cut into squares. Spoon filling onto one half of each square, fold over, and seal edges with a fork.
  6. Brush tops with egg wash and bake for 15-20 minutes until golden brown.
