Description

Ingredients

  • 1 cup Arborio rice
  • 1 cup chicken or vegetable broth
  • 4 oz fresh burrata cheese
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 2 tbsp olive oil (for frying)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Sauté minced garlic until fragrant. Add Arborio rice and toast for about 2 minutes.
  2. Gradually add warm broth while stirring continuously until rice is creamy and most liquid is absorbed (about 18-20 minutes). Remove from heat.
  3. Stir in grated Parmesan and torn burrata until melted. Let the mixture cool completely.
  4. With wet hands, form cooled risotto into balls around small pieces of burrata in the center. Roll each ball in panko breadcrumbs.
  5. Heat olive oil in a deep skillet over medium-high heat. Fry arancini until golden brown on all sides (about 4-5 minutes per batch). Drain on paper towels before serving.
