- 1 cup chicken or vegetable broth
- 4 oz fresh burrata cheese
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 2 tbsp olive oil (for frying)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Sauté minced garlic until fragrant. Add Arborio rice and toast for about 2 minutes.
- Gradually add warm broth while stirring continuously until rice is creamy and most liquid is absorbed (about 18-20 minutes). Remove from heat.
- Stir in grated Parmesan and torn burrata until melted. Let the mixture cool completely.
- With wet hands, form cooled risotto into balls around small pieces of burrata in the center. Roll each ball in panko breadcrumbs.
- Heat olive oil in a deep skillet over medium-high heat. Fry arancini until golden brown on all sides (about 4-5 minutes per batch). Drain on paper towels before serving.
