  • 2 cups butternut squash, peeled and cubed
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1 medium onion, chopped
  • 1 pre-baked pie crust (9-inch)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and pepper. Roast for about 25 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent (5-7 minutes). Add spinach and cook until wilted.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper. Fold in the roasted squash, sautéed onions, spinach, and shredded cheese.
  4. Pour the filling into the pre-baked pie crust. Bake at 375°F (190°C) for 30-35 minutes until golden brown on top.
  5. Allow cooling for 10 minutes before slicing. Serve warm or at room temperature.
