Description

  • 1 sheet puff pastry (thawed)
  • 2 large yellow onions (sliced)
  • 4 tbsp unsalted butter
  • 1 tsp fresh thyme leaves
  • 4 oz goat cheese or cream cheese (crumbled)
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into 4-inch squares. Place on a parchment-lined baking sheet.
  2. In a skillet, melt butter over medium heat. Add sliced onions, cooking until golden brown and soft, about 25 minutes.
  3. Stir in thyme and balsamic vinegar in the last 5 minutes of cooking; season with salt and pepper.
  4. Spoon the caramelized onion mixture onto each pastry square and top with crumbled cheese.
  5. Bake for 15-20 minutes until the pastry is golden brown.
