  • 1 tsp baking powder

  • ½ cup vegetable oil
  • 2 cups grated carrots (fresh)
  • ½ cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the eggs with the vegetable oil; then add the grated carrots and mix well.
  4. Gradually fold the dry ingredients into the wet mixture until just combined—avoid over-mixing.
  5. If using nuts, gently fold them in.
  6. Pour the batter into the prepared pan and smooth it out. Bake for 25-30 minutes or until a toothpick comes out clean.
