  • 1 lb lean ground beef
  • 2 cups penne or rotini pasta
  • 2 cups grated cheddar cheese
  • 1 cup tomato sauce
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and minced garlic; sauté until soft, about 3-4 minutes.
  2. Add ground beef; cook until browned and no longer pink, around 5-7 minutes. Drain excess fat if needed.
  3. Stir in tomato sauce, Italian seasoning, salt, and pepper. Let it simmer on low heat for 10 minutes to meld flavors.
  4. Meanwhile, boil salted water and cook pasta according to package instructions until al dente; drain but reserve some pasta water.
  5. Combine cooked pasta with the meat sauce in the skillet; stir until evenly coated. If too thick, add reserved pasta water as needed.
  6. Sprinkle grated cheddar cheese on top; cover briefly until melted and bubbly, around 3-5 minutes.
