- 1 cup fresh broccoli florets (chopped)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (plus extra for topping)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups marinara sauce (store-bought or homemade)
Instructions
- Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook pasta shells until al dente. Drain.
- In a skillet, heat olive oil over medium heat. Add seasoned chicken and cook until golden brown (about 6-8 minutes). Stir in chopped broccoli during the last few minutes until tender.
- In a bowl, combine ricotta, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, pepper, and the chicken-broccoli mixture.
- Stuff each shell with the filling and place seam side up in a baking dish coated with marinara sauce.
- Pour remaining marinara sauce over stuffed shells and sprinkle with extra mozzarella. Bake uncovered for 25-30 minutes until bubbly and golden.
