  • 12 jumbo pasta shells
  • 2 cups cooked, diced boneless skinless chicken breasts
  • 1 cup fresh broccoli florets (chopped)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups marinara sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook pasta shells until al dente. Drain.
  2. In a skillet, heat olive oil over medium heat. Add seasoned chicken and cook until golden brown (about 6-8 minutes). Stir in chopped broccoli during the last few minutes until tender.
  3. In a bowl, combine ricotta, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, pepper, and the chicken-broccoli mixture.
  4. Stuff each shell with the filling and place seam side up in a baking dish coated with marinara sauce.
  5. Pour remaining marinara sauce over stuffed shells and sprinkle with extra mozzarella. Bake uncovered for 25-30 minutes until bubbly and golden.
