  • 2 cups shredded cheddar and mozzarella cheese (divided)

  • 1 green bell pepper, diced
  • 10.5 oz can cream of mushroom soup
  • 1 cup low-sodium beef broth
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, sauté chopped onion and diced bell pepper until onions are translucent (about 3-4 minutes).
  3. Add the ground beef to the skillet and cook until browned; drain excess fat if needed.
  4. In a mixing bowl, combine the beef mixture with rice, cream of mushroom soup, beef broth, garlic powder, salt, and pepper; mix well.
  5. Fold in half of the shredded cheese into the mixture before transferring it to your prepared baking dish.
