  • 4 boneless, skinless chicken breasts
  • 8 slices deli ham
  • 4 slices Swiss cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 4 tbsp unsalted butter (for sauce)
  • 1 cup heavy cream (for sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to about 1/2 inch thick.
  2. Layer ham and Swiss cheese on each chicken breast, leaving a half-inch border.
  3. Roll tightly and secure with toothpicks. Dredge in flour, dip in egg wash, then coat in panko breadcrumbs.
  4. Place on a greased baking sheet and bake for 25-30 minutes until golden brown.
  5. For the sauce, melt butter in a saucepan, add cream and simmer until thickened.
  6. Slice rolled chicken into medallions and drizzle with the creamy sauce before serving.
