  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 cup full-fat coconut milk
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp garam masala
  • ½ cup cashew nuts (for paste)
  • Kosher salt & black pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces and finely mincing the onion, garlic, and ginger.
  2. In a large skillet over medium heat, heat oil and sauté the onions until golden brown.
  3. Add the chicken pieces along with garlic, ginger, cumin, coriander, and garam masala; stir until fragrant (about 5 minutes).
  4. Pour in the coconut milk and scrape up any browned bits from the skillet; bring to a gentle simmer for about 20 minutes or until the chicken is tender.
  5. Blend cashews with water until smooth; stir into the korma sauce for creaminess.
  6. Season with salt and pepper to taste; garnish with fresh cilantro before serving over basmati rice or naan.
