  • 2 large eggs
  • 1 cup chocolate sandwich cookies, coarsely chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Beat in eggs one at a time, followed by the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Carefully stir in the chopped chocolate sandwich cookies and semi-sweet chocolate chips.
  6. Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges are golden brown but centers remain soft.
  7. Cool on baking sheets for five minutes before transferring to wire racks.
