  • 2 cups peeled and diced butternut squash
  • 1 pound Italian sausage (sweet or spicy)
  • 8 ounces fusilli or penne pasta
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon dried sage

Instructions

  1. Preheat oven to 400°F (200°C). Roast butternut squash cubes for about 25 minutes until golden brown.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet over medium heat, brown crumbled sausage for about 6 minutes. Remove and set aside.
  4. Sauté diced onion in the same skillet until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
  5. Stir in roasted butternut squash and dried sage, mashing some squash into the mixture.
  6. Pour in heavy cream slowly, stirring until well combined and creamy (about 3 minutes).
  7. Add cooked sausage and drained pasta; toss to coat evenly.
  8. Serve hot, garnished with extra Parmesan cheese if desired.
