- 1 cup wild rice blend
- 8 oz fresh mushrooms (cremini or button), sliced
- 1 cup celery, finely chopped
- 1 cup onion, finely chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté finely chopped onion and celery until translucent (about 5 minutes).
- Add chicken breasts, season with salt and pepper, and cook until no longer pink (about 7 minutes per side). Remove chicken and let cool slightly.
- In the same skillet, sauté sliced mushrooms for about 5 minutes until tender.
- Stir in chicken broth, heavy cream, and garlic powder; simmer for about 5 minutes until thickened.
- Shred or cube the chicken and return it to the skillet along with cooked wild rice; mix well.
- Transfer mixture to a greased casserole dish, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
- Let rest for 5 minutes before serving.
