  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup wild rice blend
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 cup celery, finely chopped
  • 1 cup onion, finely chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté finely chopped onion and celery until translucent (about 5 minutes).
  3. Add chicken breasts, season with salt and pepper, and cook until no longer pink (about 7 minutes per side). Remove chicken and let cool slightly.
  4. In the same skillet, sauté sliced mushrooms for about 5 minutes until tender.
  5. Stir in chicken broth, heavy cream, and garlic powder; simmer for about 5 minutes until thickened.
  6. Shred or cube the chicken and return it to the skillet along with cooked wild rice; mix well.
  7. Transfer mixture to a greased casserole dish, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  8. Let rest for 5 minutes before serving.
