  • 12 jumbo pasta shells
  • 2 cups fresh mushrooms (cremini and button), sliced
  • 4 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, melt butter and sauté mushrooms for 5-7 minutes until golden brown. Add garlic and cook until fragrant.
  3. Stir in cream cheese until melted; add heavy cream and Italian seasoning, mixing well.
  4. Fold in spinach and Parmesan until fully combined.
  5. Fill each pasta shell with the creamy mixture and place in a baking dish lined with marinara sauce. Top with remaining sauce and extra Parmesan.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until bubbly.
