- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 12 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Italian herbs (basil or oregano) – optional
Instructions
- Cook the pasta in salted boiling water according to package directions until al dente. Reserve ½ cup of pasta water before draining.
- In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant. Gradually add heavy cream while stirring.
- Stir in grated Parmesan cheese until melted and smooth; adjust consistency with reserved pasta water if needed.
- Add sliced chicken and drained pasta to the skillet, tossing gently until well-coated.
- Serve hot, garnished with extra cheese or herbs if desired.
