  • 8 oz fettuccine or penne pasta
  • 2 skinless salmon fillets (about 6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Drain, reserving some pasta water.
  2. In a skillet over medium heat, melt butter and sauté garlic until fragrant (about 1 minute).
  3. Add salmon fillets and cook for 4-5 minutes per side until flaky. Remove from skillet and set aside.
  4. Pour heavy cream into the skillet; stir in lemon juice and Parmesan cheese, cooking until slightly thickened (3-4 minutes).
  5. Stir in spinach until wilted (about 2 minutes). Flake salmon back into the skillet and combine with cooked pasta, adding reserved water for desired consistency. Season with salt and pepper.
