- 8 oz fettuccine or penne pasta
- 2 skinless salmon fillets (about 6 oz each)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- ½ cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Drain, reserving some pasta water.
- In a skillet over medium heat, melt butter and sauté garlic until fragrant (about 1 minute).
- Add salmon fillets and cook for 4-5 minutes per side until flaky. Remove from skillet and set aside.
- Pour heavy cream into the skillet; stir in lemon juice and Parmesan cheese, cooking until slightly thickened (3-4 minutes).
- Stir in spinach until wilted (about 2 minutes). Flake salmon back into the skillet and combine with cooked pasta, adding reserved water for desired consistency. Season with salt and pepper.
