  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese (whole milk preferred)
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh or frozen spinach (optional)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tsp Italian herbs

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper, then cook in a skillet over medium heat for about 6-7 minutes on each side until golden brown. Remove from heat and let cool before shredding.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and chicken broth; stir until thickened slightly.
  4. Mix ricotta cheese with Italian herbs in another bowl until smooth. Combine shredded chicken into the sauce mixture along with spinach if using.
  5. Assemble by spreading a thin layer of sauce in the baking dish, layering with noodles, half of the ricotta mixture, mozzarella cheese, and repeat until all ingredients are used.
  6. Top with remaining sauce and additional mozzarella and Parmesan cheese. Cover with aluminum foil and bake for 25 minutes; remove foil and bake uncovered for an additional 15 minutes until bubbly and golden brown.
  7. Let cool for about 10 minutes before slicing.
