Ingredients
- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 9 no-boil lasagna noodles
- 15 oz ricotta cheese (whole milk preferred)
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 cup fresh or frozen spinach (optional)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- 2 tsp Italian herbs
Instructions
- Preheat the oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper, then cook in a skillet over medium heat for about 6-7 minutes on each side until golden brown. Remove from heat and let cool before shredding.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and chicken broth; stir until thickened slightly.
- Mix ricotta cheese with Italian herbs in another bowl until smooth. Combine shredded chicken into the sauce mixture along with spinach if using.
- Assemble by spreading a thin layer of sauce in the baking dish, layering with noodles, half of the ricotta mixture, mozzarella cheese, and repeat until all ingredients are used.
- Top with remaining sauce and additional mozzarella and Parmesan cheese. Cover with aluminum foil and bake for 25 minutes; remove foil and bake uncovered for an additional 15 minutes until bubbly and golden brown.
