Ingredients
- 2 lbs chuck roast
- 4 dried guajillo peppers
- 1 large yellow onion, chopped
- 6 garlic cloves, minced
- 2 tsp cumin powder
- 1 tsp dried Mexican oregano
- ½ cup fresh cilantro, chopped (plus more for topping)
- Juice of 2 limes
- 12 corn tortillas
Instructions
- Soak the dried guajillo peppers in boiling water for 15 minutes until softened. Blend with garlic, cumin, oregano, and salt until smooth.
- Sear the chuck roast in a large pot over medium-high heat for about 4-5 minutes per side until browned.
- Add chopped onions and sauté for about 3 minutes until translucent.
- Pour the blended marinade over the meat, add enough water to cover halfway, bring to a boil, then reduce heat and simmer for about 2 hours or until fork-tender.
- Shred the meat and reserve some broth for dipping.
- Warm tortillas on a skillet, fill them with shredded beef, top with cilantro and diced onions, and serve with lime wedges.
