  • 1 lb cod fillets
  • 1 cup flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 6 slider buns
  • ½ cup tartar sauce
  • 1 cup green and purple cabbage slaw (mixed)
  • Salt and pepper to taste
  • Optional: ¼ tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season cod fillets with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  4. Dredge each seasoned fish fillet in flour, dip into egg wash, then coat with panko.
  5. Place breaded fillets on a parchment-lined baking sheet and bake for 15–20 minutes until golden brown.
