  • 12 oz spaghetti or fettuccine
  • 4 medium yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 2 cups grated Gruyere cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt butter over medium heat. Add sliced onions and cook for about 10 minutes until soft. Sprinkle with salt and reduce heat to low; continue to cook for approximately 30 minutes until golden brown.
  2. Meanwhile, boil salted water in a pot. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  3. Combine drained pasta with caramelized onions in the skillet. Gradually stir in heavy cream and add Gruyere cheese until melted and creamy. Adjust consistency with reserved pasta water as needed.
  4. Season with salt and pepper to taste before serving. Garnish with additional Gruyere and fresh herbs if desired.
