  • 1 cup fresh strawberries, hulled and halved
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 4 slices soft sandwich bread (or brioche)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Rinse and hull the strawberries, then slice them in half and set aside.
  2. In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract until smooth.
  3. Spread the cheesecake mixture on one slice of bread and top with sliced strawberries. Cover with another slice of bread.
  4. In a shallow bowl, whisk together the eggs to create an egg wash.
  5. Dip each sandwich into the egg wash and coat with panko breadcrumbs.
  6. Heat vegetable oil in a skillet over medium heat. Fry each sandwich until golden brown on both sides, approximately 3-4 minutes per side.
