  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb Yukon Gold or red potatoes, chopped
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Pat chicken breasts dry and season with salt, pepper, oregano, and thyme.
  4. In a skillet over medium-high heat, add olive oil and sear chicken for about 5 minutes on each side until golden brown.
  5. Remove chicken from the skillet; add minced garlic to the remaining oil and sauté for about 1 minute.
  6. Pour in heavy cream and scrape any bits off the bottom; stir in grated Parmesan until smooth.
  7. Add chopped potatoes to the creamy mixture, coating them well.
  8. Transfer everything into a baking dish; place chicken on top of potatoes. Bake uncovered for 25 minutes until bubbly and golden.
  9. Sprinkle extra Parmesan before serving; let it rest for a few minutes.
