Ingredients

  • 2 lbs Yukon Gold potatoes
  • 6 slices thick-cut bacon
  • 1 medium red onion, finely chopped
  • 1/2 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly before cutting into bite-sized pieces.
  2. While potatoes cook, fry bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
  3. In the same skillet, sauté red onions in the leftover bacon grease until translucent (about 3-4 minutes).
  4. In a bowl, whisk together apple cider vinegar, Dijon mustard, salt, pepper, and crumbled bacon.
  5. Gently fold the warm potato pieces into the dressing mixture until coated.
  6. Sprinkle with parsley before serving warm or refrigerating to chill.
