  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup unsulfured molasses
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1/2 cup softened butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup confectioners' sugar
  • 1/4 cup heavy cream or cream cheese

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually combine dry ingredients into the wet mixture until just mixed.
  5. Scoop rounded mounds of batter onto baking sheets about 2 inches apart. Bake for 10-12 minutes until edges are firm but centers are soft.
  6. Allow to cool slightly on baking sheets before transferring to wire racks. Fill with cream once cooled.
