  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp baking soda

  • For the glaze: 1 cup powdered sugar
  • 12 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree with granulated and brown sugars until smooth. Add the egg and mix well.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Drop rounded tablespoons of dough onto lined baking sheets.
  6. Bake for 12-15 minutes until golden on the edges but soft in the center.
  7. Cool completely before glazing with a mixture of powdered sugar and milk.
