- 4 medium bell peppers (red, yellow, or green)
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup crumbled feta cheese
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped

- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant. Add diced chicken and cook until no longer pink, about 6-8 minutes.
- Stir in feta cheese, dill, parsley, lemon juice, salt, and pepper into the cooked chicken mixture.
- Cut the tops off the bell peppers and remove seeds. Rinse under cold water.
- Stuff each pepper generously with the chicken mixture and place upright in a baking dish.
- Drizzle with olive oil and bake for about 30 minutes or until peppers are tender.
