Ingredients
- 1 cup bell peppers (mixed colors), chopped
- 1 cup zucchini, sliced thin
- 1/2 cup red onion, sliced
- 1 cup cremini mushrooms, sliced
- 2 tbsp extra virgin olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 4 large tortillas (flour or corn)
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine chopped bell peppers, zucchini, red onion, and mushrooms. Drizzle with olive oil and season with salt and pepper.
