  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup zucchini, sliced thin
  • 1/2 cup red onion, sliced
  • 1 cup cremini mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 4 large tortillas (flour or corn)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine chopped bell peppers, zucchini, red onion, and mushrooms. Drizzle with olive oil and season with salt and pepper.
  3. Grill the vegetables in a single layer for 5-7 minutes until tender and charred.
  4. On a tortilla, sprinkle half with mozzarella cheese, add grilled veggies, then top with feta cheese and more mozzarella. Fold the tortilla over.
  5. Grill each quesadilla for 3-4 minutes per side until golden brown and crispy.
  6. Let cool slightly before slicing into wedges and serve with salsa or guacamole.
