  • 1 lb large shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1 cup fresh corn (or 1 can, drained)
  • 1/4 cup chopped cilantro
  • Juice of 2 limes
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp honey
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Marinate shrimp with lime juice, chili powder, garlic powder, salt, and pepper in a bowl for 15 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill shrimp for about 2 minutes per side until pink and opaque.
  3. In another bowl, mix diced avocado, corn, cilantro, lime juice, salt, and pepper to make the salsa.
  4. In a small bowl, whisk together Greek yogurt, mayonnaise, honey, garlic powder, lime juice, salt, and pepper for the creamy sauce.
