Ingredients
Scale
- 4 medium russet potatoes
- 1 pound sirloin or ribeye steak
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream (or Greek yogurt)
- ¼ cup sliced green onions
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly, poke holes with a fork, rub with olive oil, sprinkle with salt, and bake for about 45 minutes until tender.
- While the potatoes bake, cut the steak into bite-sized pieces and season with salt, pepper, and paprika. Grill over medium-high heat for 3-4 minutes per side until cooked to your liking.
- Once baked, slice each potato open lengthwise and fluff the insides with a fork. Add shredded cheese while hot so it melts.
- Top with grilled steak bites and drizzle sour cream over each potato. Finish with sliced green onions.
