  • 2 lbs boneless, skinless chicken thighs
  • 1 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, thinly sliced
  • 3 green onions, chopped
  • 2 tbsp rice vinegar
  • 1/4 cup pineapple juice

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, minced garlic, ginger, rice vinegar, and pineapple juice until well combined.
  2. Place chicken thighs in a resealable plastic bag or dish; pour marinade over them. Seal tightly and refrigerate for at least 1 hour (preferably overnight for best flavor).
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F (200°C).
  4. Remove chicken from marinade (reserve leftover marinade) and cook on the grill or baking sheet for about 6-8 minutes per side until the internal temperature reaches 165°F.
  5. Pour leftover marinade into a saucepan and bring to a boil; reduce heat and simmer for 5 minutes until slightly thickened.
  6. Serve chicken drizzled with sauce and garnish with chopped green onions alongside rice or grilled veggies.
