  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 2 cups low-sodium vegetable or chicken broth
  • 1/2 cup carrots, finely chopped
  • 1/2 cup frozen peas
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent (about 4-5 minutes).
  2. Add minced garlic and cook for an additional minute, stirring frequently.
  3. Stir in the long-grain rice and toast for 2-3 minutes until well-coated.
  4. Pour in warmed broth while stirring gently; bring to a boil then reduce to low heat. Cover tightly and simmer for 15-20 minutes.
  5. Remove from heat and fluff the rice with a fork. Fold in the peas and carrots, covering for another 5 minutes.
  6. Finish by adding chopped parsley before serving.
