- 2 cups low-sodium vegetable or chicken broth
- 1/2 cup carrots, finely chopped
- 1/2 cup frozen peas
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent (about 4-5 minutes).
- Add minced garlic and cook for an additional minute, stirring frequently.
- Stir in the long-grain rice and toast for 2-3 minutes until well-coated.
