Description

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs (room temperature)
  • 1/3 cup unsalted butter (melted)
  • 1/3 cup honey

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin pan.
  2. In a large bowl, mix cornmeal, flour, baking powder, sugar, and salt until combined.
  3. In another bowl, whisk together milk, eggs, melted butter, and honey until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 15-18 minutes or until golden brown and a toothpick comes out clean.
  7. While baking, prepare the honey butter glaze by melting butter and mixing in honey.
  8. Brush the warm poppers with the honey butter glaze before serving.
