  • 34 boneless, skinless chicken breasts (1 lb)
  • 1/2 cup hot honey sauce (honey + chili flakes)
  • 4 cups mixed greens or kale
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked quinoa or rice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp lemon juice
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Gather all ingredients.
  2. In a bowl, mix hot honey sauce with soy sauce, lemon juice, and garlic powder.
  3. Season chicken with salt and pepper. Sear in a skillet with oil for about 5 minutes on each side until golden brown.
  4. Transfer chicken to an oven-safe dish, drizzle half the hot honey sauce over it, and bake for 20-25 minutes until fully cooked.
  5. While chicken bakes, combine mixed greens, cherry tomatoes, sliced avocado, and cooked quinoa in a large bowl. Toss with olive oil and remaining hot honey sauce.
  6. Slice the baked chicken and serve on top of the salad mixture. Drizzle more hot honey sauce if desired.
