- 2 cups mixed vegetables (bell peppers and broccoli)
- Juice of 1 lime
Instructions
- In a bowl, mix honey, soy sauce, garlic, and red pepper flakes. Add the chicken breasts and coat thoroughly. Let marinate for at least 30 minutes.
- Heat oil in a skillet over medium-high heat. Sear the marinated chicken for about 5-7 minutes on each side until golden and cooked through.
- Toss chopped vegetables into the skillet once the chicken is nearly done cooking. Stir-fry until veggies are tender-crisp.
- Remove from heat, drizzle with additional honey if desired, and serve over cooked rice with a squeeze of lime.
