Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lb)
  • 4 cloves fresh garlic, minced
  • 1/2 cup high-quality honey
  • 1/4 cup low-sodium soy sauce
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 cups cooked rice (white or brown)
  • 2 cups mixed vegetables (bell peppers and broccoli)
  • Juice of 1 lime

Instructions

  1. In a bowl, mix honey, soy sauce, garlic, and red pepper flakes. Add the chicken breasts and coat thoroughly. Let marinate for at least 30 minutes.
  2. Heat oil in a skillet over medium-high heat. Sear the marinated chicken for about 5-7 minutes on each side until golden and cooked through.
  3. Toss chopped vegetables into the skillet once the chicken is nearly done cooking. Stir-fry until veggies are tender-crisp.
  4. Remove from heat, drizzle with additional honey if desired, and serve over cooked rice with a squeeze of lime.
