Ingredients

  • 1 lb boneless, skinless chicken breasts (diced)
  • 2 cups long-grain white rice (rinsed)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 3 cloves garlic (minced)
  • 3 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 cup water

Instructions

  1. Set your Instant Pot to sauté mode and heat the sesame oil.
  2. Add the diced chicken and cook until golden brown (about 5 minutes).
  3. Stir in the minced garlic and frozen vegetables; sauté for about 2 minutes.
  4. Add the rinsed rice, soy sauce, and water to the pot. Stir gently to combine.
  5. Close the lid and set to manual high pressure for 5 minutes.
  6. Perform a quick release of pressure once cooking is complete.
  7. Fluff the rice with a spatula and garnish with chopped green onions before serving.
