Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (mixed colors), diced
  • 1/2 cup olives (black or green), pitted and sliced
  • 4 oz feta cheese, crumbled
  • 1/2 cup Italian dressing

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse with cold water.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, red onion, and olives into bite-sized pieces.
  3. In a large bowl, combine the cooled pasta with the chopped vegetables and crumbled feta cheese. Toss gently.
  4. Pour the Italian dressing over the salad and toss until all ingredients are evenly coated. Adjust seasoning with salt and pepper if needed.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
